With warmer weather on the way we’re breaking out the BBQs more and more. I don’t know about you but nothing beats a delicious salad to go along with all of those BBQ meats. Today I want to share a Celery and Apple slaw that I have experimented with and really enjoy throwing together. If you’re not a fan of walnuts you can actually use slithered almonds or leave them out all together!
The bitterness of the lemon, the saltiness of the cheese and the sweetness of the apple work together beautifully. I hope it will become a regular dish for you too!
Celery and apple slaw
You will need:
4 celery sticks, cut into matchsticks
1 large green apple, cut into matchsticks
100g fetta cheese, crumbled
35g (1/3 cup) walnut halves, toasted, coarsely chopped
2 tablespoons sour cream
2 tablespoons lemon juice
Pinch of caster sugar
1 1/2 tablespoons chopped fresh chives
Combine the celery, apple, fetta cheese and half the walnuts in a large bowl.
Whisk the sour cream, lemon juice, sugar and 1 tablespoon chives in a small bowl. Season. Pour over the celery mixture and toss to combine. Sprinkle with remaining walnuts and chives.
