So my mum hates brussel sprouts. We never had to eat them growing up because there was no way she wanted to make us eat them if she didn’t want to. Getting kids to eat veggies is hard enough right?
This year I am hoping to get my entire family to love brussel sprouts (even mum!). And this is how I plan to do it…
Oven Roasted Garlic Brussels Sprouts with Bacon

Total Time25 minutes
1 tablespoon honey
3 tablespoons balsamic vinegar, divided
2 pounds brussel sprouts, halved
1 tablespoon olive oil
4 slices bacon, diced
4 cloves garlic, minced
Salt and freshly ground black pepper, to taste
Preheat oven to 200 degrees C. Lightly oil a baking sheet or coat with nonstick spray.
In a small bowl, whisk together honey and 1 tablespoon balsamic vinegar; set aside.
Place brussel sprouts in a bowl with remaining 2 tablespoons balsamic vinegar, olive oil, bacon and garlic; season with salt and pepper, to taste. Gently toss to combine.
Spread our the Brussel sprout mixture in a single layer on the prepared baking sheet.
Place into oven and bake for 12-14 minutes, or until tender. Stir in honey mixture.
